This may be blogging overload, but I've got a bit of a baking backlog! I made this strawberries and cream cake last week. It's based on the Hummingbird blueberry cake - but I wanted to make it a bit different (and we only had strawberries in the fridge).

It's quite a cake though . . . 6 eggs! With the blueberry recipe, you're meant to put some of the fruit in the mixture, but I didn't really know how the strawberries would cook, so I pulped a few and put that in mix instead. I had to keep it in the oven for a bit longer (20 minutes or so) but it came out ok.
I made some cream cheese icing to top it off and decorated it with a few strawberries. Serve it up for Wimbledon perhaps? ;)
I won't be posting for a few weeks now as I'm off on my holidays, but I'll be back (baking) before you know it! :D xxx
