There's something quite nice about making cake at midnight.


Lemon victoria sponge with lemon curd and lemon cream filling - LEMONS!

So, this was my sister's (23rd!) birthday cake. I was in a bit of rush to get her something this year - so I decided to make her a cake (but a bit late in the day!). Never have I spread lemon curd on a cake at midnight before! It was meant to be a lemon victoria sponge with limoncello cream filling, but after an unsuccessful lunch hour in search of the stuff, I went for some good quality lemon extract instead.

This is a Lorraine Pascale recipe. I wasn't really convinced by her show 'Baking Made Easy' at first.  I just thought BBC had got another pretty face in just to do a bit of baking.  She doesn't just bake though..oh no!
