JAFFA
1 packet orange jelly + boiling water
1 tbsp marmalade
7oz dark chocolate
CAKE
2 eggs
2oz caster sugar
2oz plain flour
METHOD
1) Make up the jelly (adding 1 tbsp of marmalade). Pour into a baking tray and leave to set.
2) Preheat the oven to 180C.
3) To make up the cakes, bring a pan of water to the boil and suspend the mixing bowl over the top - make sure the bottom of the bowl doesn't touch the water!
4) Add the eggs and sugar to the bowl and stir continuously for 5 minutes. The mixture should become light and bubbly.
5) Add the flour and beat until smooth.
6) Take the mixture off the heat and divide between a 12 hole greased muffin tin.
7) Bake for 8 to 10 minutes and until pale golden-brown and leave to cool.
8) Once the cakes have cooled and the jelly has set, cut out small discs of jelly and place on each cake.
9) Melt the dark chocolate and carefully pour over each cake. Leave them to set.

I'm definitely trying this. Except with vegetarian jelly. And gluten free cake. :D
ReplyDeleteI'm thinking maybe these looked a bit better than they tasted. The orange flavour was a bit diluted if anything! Maybe marmalade is the way forward?! Thank you for commenting! You're the first to do so :D xx
